The Story

For over a century and a half, the family has been devoted solely to the art of Traditional Balsamic Vinegar of Modena. One of the many aspects which set them apart is the rare distinction of cultivating their own organic grapes, a luxury few can claim today. Across their estate, four varieties of grapes—both red and white—are carefully nurtured and harvested sequentially at their specific moments throughout September and October. From their very own vineyards to a refined process of pressing, preserving and cooking the delicate juice, the family has held on to millennia-old traditions with a loving precision.

The Tradition

In pursuit of perfection, Acetaia del Cristo uses a soft press to achieve their unique gentle aroma and smooth flavour. The freshly pressed juice undergoes multiple stages of careful purification, allowing impurities to rise to the surface and be removed. As the juice is cooked over six to eight hours, it slowly transforms until only the purest balsamic essence remains. Just after these crucial few hours, the Traditional Balsamic Vinegar of Modena begins its natural fermentation process, releasing its sweetness as water evaporates—a critical step towards the robust yet balanced profile, driven by caramelisation of natural sugars.

The Method

Here is also where the magic of ageing happens. Each year only a small portion is drawn from each barrel and afterwards everything is meticulously refilled from one barrel to the next in line—a process that maintains the integrity and bolsters the flavours of the vinegar. From their oldest barrel, only 27 bottles are drawn each year creating their most cherished and praised family treasure—the "Grandmother’s Collection" Traditional Balsamic Vinegar of Modena P.D.O.

What makes all of their balsamic varieties even more special are the various aromatic nuances achieved through ageing in selected barrels grouped by different wood types.
